Bits and Bites
This was the beauty I beheld Thursday morning! Up in the North Georgia Mountains, some snow still remains even after the warmer temperatures and rain of the last few days! Although Wednesday night’s 6 inches of snow brought back fond memories of my childhood in Ohio and the Black Lab found it to his liking, it meant that travel down to Lawrenceville, Lilburn and Buford was not an option!
I am deeply grateful to Marie Wheeler who coordinated the Crossfit/Lawrenceville Market. Marie unselfishly volunteered to take my place when it appeared the weather would preclude me being at Market. Sarah Rockey and Marie Wheeler braved the cold temperatures to allow Market pickup to happen for both Crossfit and Hamilton Mill Members. Our Lilburn Market Coordinator, Kathy Barnes made the trek to the Crossfit/Lawrenceville, also braving the cold temps inside the Market space to accept and check in the Market orders load the items you ordered, drove to Lilburn, unloaded, set-up and ran the Lilburn Market. You all have my un-ending gratitude for your passion and dedication to our Market.
We are a community of people who believe in procuring the best food for ourselves and our families that is fresh, clean, nutrient dense and grown/produced locally. It is not uncommon on Market Day, hearing Members share recipes, discuss products or the latest ‘food news’. The Coordinators, Volunteers and I so enjoy seeing you all and being a part of connecting you with the ‘best of the best’ local Farmers/Producers and Artisans. With the cold weather and the 2 snow events last week, I was busy in the kitchen. I cooked the Chuck Roast I had ordered from Heritage Farm in the Crock Pot with the little Cream Potatoes and Carrots from Burnell Farms an Organic Onion, spices and WOW ~ it was fabulous! Flavorful and great texture! This is a perfect slow cook meal!
Not too long ago, I was discussing Bone Broth with Pat Gibbon a Member of the Crossfit/Lawrenceville Market. I lamented that it seems I am constantly making Bone Broth because I consume it daily but also want enough to use in soups or use in other recipes. Being a fellow Bone Broth Warrior, Pat explained that she uses her large electric roaster to make her broth. Hmmmm, I have one of those that sits on the shelf, only pulled out once or twice a year to roast the holiday Turkey! Now, instead of ending up with a quart or two of Bone Broth, I am rewarded with a couple of gallons! What a great idea you shared Miss Pat and I certainly am enjoying the fruits of your wisdom! Thank you!
This past week, I tried a new combination consisting of Alpaca Bones, a few Water Buffalo Bones, Lamb Necks Bones and Beef Soup Bones and the result was a wonderful, rich and complex Bone Broth! The meat was picked from the Bones and the remainder of the Chuck Roast added with Carrots, Potatoes, Onions, Brussell Sprouts, Cabbage, Peas, Tomatoes, Green Beans and a little Kale plus some spices and I created a hearty Veggie Soup! Every item in the soup were items purchased through the Market. Some were fresh and some were from the freezer, put up from last year’s Harvest! What is your latest creation?

Although Lamb was a staple of my family’s diet, it was tradition in our home to have a roasted Leg of Lamb on Easter. Greg of Heritage Farm has Leg of Lamb on special this week and I want to take advantage of this sale since Easter is April 5th! He also had the Rib Steak and Minced (Ground) Lamb offered on sale this week!
Greg has also added a Bulk Pack – Organ Feet and Bones consisting of Soup Bones, Pig Feet, Lamb Bones, Fat Back, Chicken Necks and Backs, Turkey Necks, Ham Hocks, Organ Meat. This is 20#‘s of various items for $30.00!! This is a phenomenal deal and if you make your own Pet Food, it is a fabulous find. Needless to say, I got one Bulk Pack for the Black Lab! The offering is limited in number and in frequency of availability! So, grab it now if you want it! You will not be disappointed!
The freezer at Crossfit/Lawrenceville Market still has several packages of frozen Yellow Squash, which Farmer Ricky Brown of Back River Farm put up after the harvest this summer. I spoke with Doug Ruling of Doug’s Garden yesterday and although he lost his Winter Crops this year, his seedlings for late Winter, Spring and early Summer Crops are growing profusely in his green house. His offerings will be back with us before you know it! Doug is creating some surprises in his offerings for early Spring – look for hints in the next couple of weeks! I think you will be pleasantly surprised!
The Veggie Patch lost power in their green houses in the first snow/ice event a couple of weeks ago. Some items made it through and are listed in their offerings. Andrew and crew are working hard, harvesting and planting! Did you know The Veggie Patch also has other offerings? Check our their Herbs (medicinal and culinary), Pickles, Sauces and Juices and Bloody Mary Mix!
Carrell Farms has delicious Water Buffalo and they have recently added Alpaca to their offerings. This week at all Markets, there will be samples of Alpaca Sausages! Cranberry-Sage and Basil-Sun Dried Tomato sound like intriguing combinations and something that must be tried!
Between Marie of Bakery on Brooks, our Gluten Free Master Baker and Dabrielle of My Daily Bread, our Whole Grains Master Baker, we can all enjoy fresh, organic, local Baked Goods. From Breads to Paleo Treats, Cookies to Cornbread these creative and talented ladies can supply us with nutritious products for our families.
